Chicken bowls, Poke bowls, Salad bowls… are a few of my go-to’s whenever I go out to eat. When I realized how simple they are to make at home, I wanted to try out my own shrimp bowl, and it turned out DELICIOUS. Both me and my boyfriend served ourselves twice until we were too tired to eat anymore. One of my favorite things about making your own bowls at home is that you can customize it however you want and it helps to limit and control your intake of certain foods. With this recipe, you can substitute out for a different base, use different vegetables, and even switch out the protein. This recipe is perfect for lunch or dinner. Here’s what I used:
Serves about 2 people with leftovers
Ingredients-
1 cucumber
1 avocado
Shrimp (about half a bag of frozen shrimp, if using fresh then about 1/ 1.5 lbs)
Rice / base of your choice
1 lemon/lime
Spicy mayo sauce
Unagi sauce
Furikake / seaweed flakes
Salt
Pepper
Garlic and Herb seasoning
Steps-
- Defrost the shrimp, I personally place a closed bag of shrimp in a bowl of water and put something heavy on top to keep it under the water
- Wash your rice, put the rice and water in a pot ( water should reach up to the first line on your middle finger) and put on stove and cover. The rice usually takes about 20-30 min to cook
- Peel and dice your cucumber, place in bowl, then squeeze the lemon on top, set to the side
- Start preparing your shrimp once it is defrosted, cut into cubes or keep it whole if you prefer, and season with spices of your choice ( I used garlic&herb, salt, and pepper)
- Cook shrimp on stove top until its cooked and starts getting some color.
- Slice an avocado
- Once the rice is done, place it at the bottom of the bowl, add the cucumber, avocado, and shrimp
- Add the unagi and spicy mayo sauce in a zig zag pattern
- Top with furikake and enjoy!
