I threw this salad together after having a craving for some cucumber and lemon. I decided to add a couple extra ingredients, and let me tell you, It is so addicting. Super simple and easy to make, perfect if you want to prep lunch ahead of time. If you are prepping for the next day, I would just say to wait to add the avocado until the day you will be eating it.
Ingredients
- Cucumber (I use about 3-6 mini cucumbers depending on if I want leftover)
- 1 Lemon
- 1 Avocado
- Feta Cheese Crumbles (I like the one from Trader Joe’s with Mediterranean Herbs)
- Salt, Pepper, Red Pepper flakes
Steps
- I like to start by rinsing and peeling my cucumbers. After, you’re gonna go ahead and thinly slice the cucumber to make little circles.
- After you’re done slicing, throw them in a bowl and slice your lemon in half to squeeze on top. Feel free to add more lemon to make it extra juicy.
- Then, you can cut your avocado into cubes or slices and throw those in the bowl as well.
- At this point, I like to add my salt, pepper, and red pepper flakes.
- Lastly, throw in your feta cheese, and you’re ready to enjoy!
