The other night, I wanted to make dinner for me and my boyfriend but honestly didn’t want to take so much time and wash a bunch of dishes after. I also wanted something that would make a lot at once so I could pack some for work the next day. These simple chicken tostadas were perfect and if I had more time to plan them they could’ve been even better. Either way, we both had multiple servings and ate them again the next day. Also, disclaimer, these are not traditional tostadas and my boyfriend made comments about me not using sour cream, beans, and cotija cheese… which I understand ( he still loved them and was also not making these comments in a negative way lol). But, in my defense, It was a last minute plan, and I wasn’t even going to try to make tostadas like his grandma’s because mine would never compare to her level.
If you’re looking for something to feed a group of people, requires minimal cooking and dishes, and is super easy, filling, and delicious, this might be a good choice for your next dinner.
Anyways, below I included the ingredients, alternatives, and simple steps:
Ingredients:
feeds about 4
Herb Seasoned Rotisserie Chicken
- can also make chicken yourself in crock pot, oven, or stove, but I personally wanted to save time and energy
Tostadas
Lettuce
Mexican Blend Cheese ( Cotija probably would’ve been better)
Guacamole (homemade)
- Avocados (I would use at least 6 if feeding more than 2 people)
- Cilantro (also used as topping)
- 2-3 Lemon (also used as topping)
- 1/2 an onion
- Salt & Pepper
Salsa Verde (store-bought but you can make yourself too)
Tapatio
Mayo
Suggestions for additional ingredients:
Beans
Sour Cream
Tomatoes
Jalapeño
Steps:
- I shredded up the rotisserie chicken and set it in the fridge so that I could just reheat it whenever we were ready to eat.
- Cut up lettuce and set that aside.
- Chopped up the onion, cilantro and scooped the avocados into a bowl, mix all those ingredients with 1 and 1/2 lemon, and salt and pepper to taste. (also save some cilantro to top your tostadas and keep one of the avocado pits in the guacamole to keep it fresh.
- At that point, basically everything is ready, so I just seperated the cheese, salsa, lettuce, and guacamole into bowls. Along with the mayo and Tapatio on the side, and created a tostada bar so we could put anything we wanted. All I had to do was reheat the chicken.
- Eat with toppings of your choice and Enjoy!
- When everyone is done eating and you’re putting away leftovers, you can place the toppings in small containers and set aside some tostadas in a bag. The next day you can have for lunch or even just make a salad out of it!
